Requirements:
  • Min. 2 years’ experience as restaurant manager
  • Experience in a 4* or 5* operations (hotel or cruise ships)
  • Highly proficient in spoken and written English
  • Computer skills - MS Office
  • Knowledge of inventory and revenues
  • Strong leadership skills
  • Self-organized, disciplined, and reliable
  • Stress tolerant
  • Familiar with a multicultural working environment

Role and Responsibilities:
  • Overall responsible for ensuring a professional and courteous service within the Food & Beverage department in accordance with company standards and procedures
  • Be actively involved in the daily operations and assist station-service when required
  • Keep up to date with the company standard operating procedures, particularly for the Food & Beverage department, and ensure its implementation
  • Distribute information within the team as well as to other departments
  • Prepare the duty schedules in accordance with relevant labor legislation
  • Ensure a good knowledge of the vessel’s itinerary, docking locations and shore excursions within the service team
  • Take an active role in creating a positive working environment between all departments and encourage open and respectful communication
  • Conduct regular briefings and meetings, ensuring a smooth information flow and participate in department meetings conducted by the hotel manager
  • Conduct frequent training sessions for the Food & Beverage department
  • Ensure a proper introduction of new joining crewmembers to the team
  • Evaluate the restaurant team, the bar team, and the butlers, providing feedback to crewmembers, including performance-enhancing action plans when necessary
  • Monitor and ensure necessary disciplinary actions are taken and administered according to company standards
  • Support and encourage talented crewmembers by suggesting career steps, following HR operation standards
  • Maintain a good knowledge of Food & Beverage menus
  • Strive to reach cost, revenue and rating targets, implementing necessary improvements or actions if needed
  • Review cruise questionnaires and address any issues within the Food & Beverage department, including taking appropriate actions if needed
  • Be aware of guest's specific needs and dietary requirements and recommend suitable alternatives
  • Perform presentations to guests e.g. menu presentations
  • Responsible for ensuring and maintaining cleanliness front and back of the house according to HACCP regulations, including monitoring the compliance with legal requirements
  • Observe slow running stock items and expiration control of products
  • Responsible for monthly inventories, purchase orders, including equipment items and delivery controls
  • Follow up on pending maintenance/stock requests
  • Ensure proper storage use
  • Ensure correct handling of all equipment and machinery
  • Prepare and monitor the department's vacation planning in accordance with the ships’ general vacation plan
  • Duly report any potential safety hazards

Side Tasks:
  • Assist other departments as per supervisor's instructions
  • Perform other duties as assigned, e.g. luggage service, loading, and garbage off-loading
  • Participate in all safety drills and ensure solid knowledge of designated safety role
